Chocolate Self-Saucing Pudding

I have never been particularly enthused by chocolate cake. I often find it too rich and heavy after a big meal. Don’t get me wrong, give me a block of milk chocolate it’ll be gone in the blink of an eye, but chocolate cake…not so much. Recently though, my darling housemate whipped up this amazing chocolate self-saucing pudding and she may well have changed my mind. She kindly substituted some ingredients to make it low FODMAP and gluten free. It was seriously delicious, and I’ve made it several times since. It’s an impressive dessert when served with a dusting of icing sugar, berries and thick cream. Perfectly indulgent.

Ingredients:

Pudding

  • 1 cup gluten free self-raising flour (this recipe works with regular flour too)
  • 2 tablespoons cocoa powder
  • 1/2 cup brown sugar
  • 80g butter, melted, cooled
  • 1/2 cup almond milk or lactose free milk – whichever you tolerate best (this recipe works with regular milk too)
  • 1 egg, lightly beaten
  • Lactose free cream, berries and gluten free icing sugar, to serve

Sauce

  • 3/4 cup brown sugar
  • 2 tablespoons cocoa powder, sifted
  • 1 1/4 cups boiling water

Method:

  1. Preheat oven to 180°C. Grease an 8-cup capacity ovenproof baking dish. Sift flour and cocoa into a large bowl. Stir in sugar.
  2. Combine butter, milk and egg in a jug. Slowly add to flour mixture, whisking until well combined and smooth. Spoon into baking dish. Smooth top.
  3. Make sauce: Sprinkle combined sugar and cocoa over pudding.
  4. Slowly pour boiling water over the back of a large metal spoon to cover pudding. Place dish onto a baking tray. Bake for 35 to 40 minutes or until pudding bounces back when pressed gently in centre.
  5. Serve hot with a dusting of icing sugar, cream and berries.

Shann’s Tips:

  • This pudding is best served fresh out of the oven.
